Ingredients
For the Chicken & Rice:
- 4 boneless, skinless chicken breasts or thighs *(600g / 1.3 lbs)*
- 1 tbsp (15ml) olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 200g (1 cup) long-grain white rice (or cauliflower rice for low-carb)
- 1 (400g / 14 oz) can diced tomatoes, undrained
- 480ml (2 cups) chicken broth (or vegetable broth)
- 1 (130g / 4.5 oz) can black beans, drained and rinsed
- 150g (1 cup) frozen corn
- 1 tbsp (8g) chili powder
- 1 tsp (2g) ground cumin
- 1 tsp (2g) smoked paprika
- ½ tsp (1g) dried oregano
- Salt & pepper to taste
Optional Toppings:
- Fresh cilantro, avocado slices, lime wedges, shredded cheese, sour cream
Instructions
- Sear the Chicken
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Sear for 3–4 minutes per side until golden. Remove and set aside.
- Sauté Veggies
- In the same skillet, add onion, garlic, and bell pepper. Cook for 3–4 minutes until softened.
- Add Rice & Spices
- Stir in rice, chili powder, cumin, smoked paprika, and oregano. Toast for 1 minute to enhance flavor.
- Simmer
- Pour in diced tomatoes, broth, black beans, and corn. Nestle chicken into the mixture.
- Bring to a boil, then reduce heat to low. Cover and simmer for 20–25 minutes until rice is tender and chicken reaches 75°C (165°F).
- Serve
- Fluff rice with a fork. Garnish with cilantro, avocado, and a squeeze of lime.
