Ingredients

  • 12 slices thick-cut bacon *(450g / 1 lb)*
  • 50g (¼ cup) brown sugar
  • 2 tsp (4g) finely ground coffee (espresso or dark roast)
  • 1 tbsp (15ml) maple syrup
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper (optional for heat)

For the Sandwiches:

  • 8 slices sourdough bread (or gluten-free bread)
  • 4 tbsp (60g) cream cheese (or vegan cream cheese)
  • 1 ripe avocado, sliced
  • Handful of arugula or spinach
  • 1 tbsp (15ml) mayonnaise (optional)

Instructions

  1. Prep the Bacon
    • Preheat oven to 190°C (375°F). Line a baking sheet with parchment paper.
    • In a bowl, mix brown sugar, coffee grounds, black pepper, and cayenne.
  2. Candy the Bacon
    • Lay bacon slices on the baking sheet. Brush one side with maple syrup, then press coffee-sugar mix onto each slice.
    • Bake for 18–20 minutes until crispy and caramelized. Cool on a wire rack.
  3. Assemble Sandwiches
    • Toast bread lightly. Spread cream cheese on one slice and mayonnaise on the other.
    • Layer avocado, 2–3 bacon slices, and arugula. Press gently and slice diagonally.
